What Makes a Wine Red?

Red wine is generally produced from dark-skinned grapes, with the colour extracted from the grape skins during fermentation or maceration. The exact colour, tannin and texture depend on grape variety, production choices and ageing.

Body, Tannin and Acidity

Body describes the overall weight or fullness of the wine on the palate. Tannin can create a drying or grippy sensation, especially in many structured reds. Acidity provides freshness and balance. These three ideas are more useful for beginners than simply asking whether a red is “strong.”

Cabernet Sauvignon

Cabernet Sauvignon is often associated with structured reds, noticeable tannin and flavours that can include dark fruit, herbs and spices. Its structure can make it a useful match for grilled or roasted foods, particularly when the dish has enough richness to balance the tannin.

Merlot

Merlot can offer a softer-feeling style than many Cabernet Sauvignon examples, with plum and other ripe-fruit characteristics depending on origin and production. It can work well when you want a red with less overt tannic grip.

Pinot Noir

Pinot Noir is often lighter-bodied than Cabernet Sauvignon or Shiraz. It can show red-fruit aromas, earthier notes and lively acidity. Its lighter structure can make it versatile with poultry, mushrooms and other dishes that do not need a very tannic wine.

Shiraz / Syrah

The same grape can be called Shiraz or Syrah, with regional and stylistic differences. Examples may range from ripe, fruit-forward and full-bodied to savoury, peppery and more restrained. Compare the region and producer rather than assuming every bottle tastes the same.

Serving and Pairing Basics

Many reds benefit from being served cooler than a warm room. Food pairing depends on sauce, spice, fat and preparation as much as the main ingredient. If a red feels too tannic with a dish, try more protein or fat, a less tannic wine, or a different preparation.
